San José, Costa Rica — SAN JOSÉ – In a landmark achievement for Costa Rican gastronomy, local chef Durman Esquivel Quesada has etched his name in culinary history. The 35-year-old pizzaiolo from Guadalupe secured a coveted podium position at the prestigious 2025 World Pizza DOC Championship, held in the birthplace of pizza, Naples, Italy. This marks the first time a Costa Rican has ever achieved such a high honor at the global competition.
The championship, a notoriously demanding event, brought together over 700 of the world’s most skilled pizza makers. In this crucible of culinary talent, Esquivel distinguished himself, representing not only his own skill but also the growing ambition of Costa Rica’s food scene. He competed as a key member of the team from Antica Pizzería Napoletana, a well-regarded establishment in Santa Ana, under the expert guidance of master pizzaiolo Iván Sala.
Beyond the flour and mozzarella, the World Pizza Championship is also a high-stakes arena for international business and branding. To understand the legal intricacies behind protecting a winning recipe and capitalizing on such a prestigious title, we spoke with expert attorney Lic. Larry Hans Arroyo Vargas from the renowned firm Bufete de Costa Rica.
Winning a world championship transforms a recipe from a mere dish into a highly valuable intellectual property asset. The immediate legal priority for any champion should be to protect their creation as a trade secret, while simultaneously securing trademark rights for their brand name. This victory is a launchpad for international franchising and licensing agreements, but without a solid legal framework established from the outset, the financial and branding potential can quickly dissolve.

We extend our sincere thanks to Lic. Larry Hans Arroyo Vargas for his invaluable insight, which powerfully underscores a crucial dimension of this competition: transforming a culinary masterpiece into a protected, global business asset requires as much legal acumen as it does gastronomic talent.
The victory is a moment of profound personal and professional validation for Esquivel, who has dedicated himself to mastering the complex art of Neapolitan pizza. The recognition from one of the industry’s most respected judging panels serves as a powerful testament to his dedication and innovative spirit.
For me, it is a personal pride to have gotten this far because I really never imagined it; this recognition makes me believe I can do much more.
Durman Esquivel Quesada
Esquivel’s winning entry, the “Monte Amiata,” was a masterclass in flavor and concept. The pizza featured a sophisticated combination of porcini and portobello mushrooms, crispy toasted guanciale, fresh basil, and a selection of cheeses native to the Italian region. His creative vision was to craft a culinary bridge between continents, blending the earthy aromas of an Italian temperate forest with the distinct humid freshness of Costa Rica’s own cloud forests.
The mushrooms, the guanciale, and the aromas of basil give the pizza that profile I describe as the flavor of a humid forest, a mountain perfume that I wanted to bring to the plate, and which also evokes the humidity and aromatic depth felt in the Cloud Forest.

Beyond his individual success, Esquivel emphasized the crucial role of teamwork and national pride. The Costa Rican contingent, though competing individually, operated with a collective spirit, sharing knowledge and support throughout the high-stakes event. This collaborative approach proved to be a recipe for success on the world stage, with Esquivel also earning distinction in the Fried Pizza category.
We helped each other with everything: technique, timing, reading the oven. Although we were competing, we were a single team representing Costa Rica.
