Costa Rican Culinary Program Cooks Up Opportunity for Youth with Disabilities

San José, Costa Rica — A new initiative is fundamentally changing the recipe for workforce inclusion within Costa Rica’s vibrant gastronomy sector. Fifteen young adults with cognitive disabilities, Down syndrome, or mild autism have successfully completed the inaugural “Joven Chef” (Young Chef) program, equipping them with the technical skills and hands-on experience necessary to thrive in professional kitchens and build sustainable careers.

The program is the result of a strategic alliance between the Costa Rican Chamber of Restaurants and Affiliates (CACORE) and Kerry, a global taste and nutrition company. The partnership was designed to address a critical gap in the labor market by creating a direct pathway to employability for a demographic often overlooked by traditional hiring practices. The core mission extends beyond simple training; it aims to foster genuine integration and demonstrate the immense value that diverse talent brings to the workplace.

The curriculum, developed and delivered by the International Polytechnic University, was meticulously adapted to meet the students’ needs. Over a period of more than two months, participants attended classes three times a week, earning a technical degree as a kitchen assistant and a crucial certification in food handling. This formal academic component ensures that graduates possess recognized credentials that bolster their professional profiles and validate their expertise to potential employers.

A key element of the program’s success is its emphasis on practical application. In parallel with their university studies, the young chefs engaged in supervised internships at restaurants affiliated with CACORE. This immersive experience allowed them to transition from a classroom environment to the fast-paced reality of a commercial kitchen, where they honed not only their culinary techniques but also essential soft skills such as communication, teamwork, and professional conduct.

The program’s architects are focused on creating tangible employment, not just temporary placements. This business-oriented approach ensures that the training aligns with the real-world demands of the restaurant industry, making graduates highly valuable assets from day one.

The model is already proving its effectiveness. Restaurants like Limoncello have embraced the initiative, providing internship opportunities that lead to meaningful employment. In one notable success story at the establishment, a young woman from a sister program called “Generando Baristas” was hired full-time after her internship, while another student from Joven Chef completed his kitchen practicum there, demonstrating a clear and successful pathway from training to hiring.

The concept for Joven Chef was brought to Costa Rica by Kerry, which has implemented similar successful social good programs in other countries. CACORE skillfully adapted the international model to the local context, integrating formal academic training with the specific needs of Costa Rica’s culinary landscape. This localization was further strengthened by a partnership with the Fundación Ciudadelas de Libertad, which played a vital role in the selection process for the inaugural class of students.

Buoyed by the success of this first cohort, CACORE and its partners plan to establish both Joven Chef and Generando Baristas, which focuses on youth at social risk, as annual initiatives.
