The initiative leverages the power of mycology—the study of fungi—to create a circular economy model where household food scraps and other organic materials are upcycled instead of being buried. This approach not only diverts significant volume from overburdened landfills but also creates new economic opportunities in food production, agriculture, and material science. By harnessing nature’s most effective decomposers, UNED is developing a scalable blueprint for sustainable resource management.

The project is a collaborative effort, anchored by a partnership with the Municipality of Pérez Zeledón. This local government has already established a system for collecting sorted organic waste, providing the research team with a consistent and crucial supply of raw material. This synergy between academia and municipal governance is vital for testing and refining the process in a real-world setting, ensuring the resulting technology can be effectively deployed across the country.

Ronald Sánchez Brenes, a key researcher on the project, detailed the meticulous initial steps required for the biotransformation process to succeed. The integrity of the incoming organic material is paramount, as the team seeks to control the metabolic processes of specific fungi, rather than allowing random microbial decomposition to take over.

We are collecting this household organic waste; we are carrying out a collaborative effort with the Municipality of Pérez Zeledón, which has a sorted waste collection system, and there is a specific day of the week when this waste is collected. When this waste is collected, we, as a research team, have to ensure that it has not been heavily degraded by other microorganisms, because we are interested in working with fungi, and fungi have a metabolism that we must control, domesticate, and understand in order to carry out the degradation of all the waste with the fungus.

The core of the technology lies in a process known as solid-state fermentation. To manage the workflow and prevent unwanted decay, the team first dehydrates the collected organic waste. This clever step essentially pauses the biological clock, allowing them to store the material and process it on schedule. When ready, the dried waste is rehydrated and introduced into a specialized bioreactor, creating the perfect environment for the fungi to thrive.

We have to extend the useful life of this waste, so we apply a drying process, and with this, we ensure we have time for the organic residue’s degradation. Later, when we move to the phase of working with the fungi, we add back water and the necessary conditions that every living being needs—water and nutrients, many of which come with the waste itself—to enable the growth of the fungi in a bioreactor.

The outputs from this innovative process are remarkably diverse and economically promising. The fungi’s growth results in the production of edible mushrooms, offering a new stream of nutritious food from a source once considered worthless. Furthermore, the process yields bio-inputs, such as natural fertilizers and soil enhancers, which can boost agricultural productivity while reducing reliance on chemical alternatives. Perhaps most significantly, the project is creating biomaterials that have the potential to replace single-use plastics, tackling another of the world’s most pressing environmental challenges.

Beyond the laboratory, UNED’s vision includes the widespread transfer of this technology. The goal is to empower local communities and various productive sectors across Costa Rica with the knowledge and tools to replicate this model. By decentralizing waste processing and value creation, the project aims to foster resilient local economies and create a national network of sustainable innovation, proving that the solution to the country’s garbage problem might just be growing right under our feet.
