Located diagonally from the National Stadium, the expansive new venue occupies 320 square meters on its first floor with an additional 145-square-meter mezzanine. The concept aims to replicate the spirit of the Houston original but with a distinct Tico twist. The menu is a vibrant fusion of tropical and Asian flavors, thoughtfully balanced with more casual American staples like gourmet pizzas and hamburgers, designed to appeal to a broad range of palates.

A key challenge and opportunity for the chefs was adapting the menu for the local audience. Gamboa explained that the initial offerings were more in line with the spicy profiles popular in Texas, but they quickly pivoted based on customer feedback. This careful market calibration has been crucial to their early success.

Initially, the dishes were a bit spicier, but as we observed the Tico public, we realized they generally don’t like very spicy foods. So, we adjusted the menu, and fortunately, people have received it very well, and we are very happy, but we are not letting our guard down.

People need to come with an open mind to try our dishes: the pistachio-crusted snapper with a fig compote. Also, items like the Brussels sprouts, which are made here with chorizo, whereas over there they use bacon. And it’s prepared with a soy reduction mixed with passion fruit.

When Bruce came, he realized that service in Costa Rica is generally good. And that is the key: treating each other with respect and affection. In these three months, the staff has been doing great, they are very comfortable, and they love it, which makes me happy and enthusiastic.
