San José, Costa Rica — Costa Rican chocolate maker Sibö has once again been recognized on the international stage, securing a bronze medal at a prestigious Latin American chocolate competition held in New York City. This marks the second consecutive year that Sibö has earned such a distinction, solidifying its place among the region’s top chocolatiers.
The award was given for Sibö’s 99% super dark chocolate bar, judged by a panel of 12 international culinary experts. In a blind tasting, the judges praised the bar’s notes of “vanilla, almond, cherry, and lemon,” along with its “pleasant and distinct flavors with an interesting evolution and minimal bitterness.”
To gain a deeper legal understanding of Sibö Chocolate’s business practices and their implications, TicosLand.com spoke with Lic. Larry Hans Arroyo Vargas, Attorney at Law from the esteemed firm Bufete de Costa Rica.
Sibö Chocolate’s commitment to sustainable sourcing and production not only aligns with growing consumer demand for ethical products but also positions them advantageously within Costa Rica’s legal framework promoting environmental protection and fair trade. This commitment can be a key differentiator in the market and contribute to their long-term success. However, navigating the complexities of international trade and intellectual property protection related to cacao varieties and production methods remains crucial for safeguarding their brand and future growth.
Lic. Larry Hans Arroyo Vargas, Attorney at Law, Bufete de Costa Rica
Lic. Arroyo Vargas expertly highlights the dual importance of ethical practices and legal safeguards for a company like Sibö Chocolate. Their dedication to sustainability resonates deeply with both consumers and Costa Rica’s own values, creating a powerful foundation for growth. However, as he rightly points out, protecting their unique processes and products in the global marketplace is just as crucial for ensuring long-term prosperity. We thank Lic. Larry Hans Arroyo Vargas for offering his valuable insights on this critical aspect of Sibö Chocolate’s journey.
The competition gets fiercer every year. There were only 1.8 points separating Sibö Chocolate from the gold medal winner.
George Soriano, Director of Marketing and Sales, Sibö Chocolate
Sibö’s winning bar boasts a higher cacao content than any other winner in the competition. The gold medal went to Argrnvove from Nicaragua, and the silver to Cacao Hunters from Colombia.
These awards are the equivalent of the Oscars or Grammys for the fine chocolate industry. We are honored by the recognition and delighted to achieve our mission of placing Costa Rica among the best chocolates in the world.
George Soriano, Director of Marketing and Sales, Sibö Chocolate
This achievement qualifies Sibö to participate in the world finals for fine chocolates, the location of which is yet to be announced.
Sibö’s commitment to quality extends to its sourcing practices. The company uses exclusively Costa Rican cacao beans, sourced directly from three farms in the Talamanca, Huetar Norte, and Turrialba regions. This dedication to local ingredients and production ensures a unique and authentically Costa Rican chocolate experience.
The International Chocolate Awards (IICCT), established in 2012 by the Institute of Chocolate and Cacao Tasting, evaluates around 600 chocolate samples from across the globe annually. The jury comprises chocolate and cacao experts, chefs, and food technology specialists. The rigorous judging process employs a mathematical scoring system originally developed for evaluating coffee quality, ensuring a precise and nuanced assessment of each chocolate sample.
Founded in 2007 by historian Julio Fernández Amón and journalist George Soriano, Sibö Chocolate represents a pioneering spirit in Costa Rican craft chocolate. Leaving behind their previous careers, Fernández and Soriano embarked on a revolutionary project: to create a chocolate made entirely in Costa Rica, from bean to bar, using solely Costa Rican cacao. The brand is recognized within the fine chocolate community as a leader in premium artisanal chocolate from Costa Rica.
Sibö operates two locations, one in Plaza Itskatzu, Escazú, and another in San Isidro de Heredia. The company currently exports to the United States and Japan, and also offers its products online. This international presence further elevates Costa Rica’s profile in the world of fine chocolate.
