Believing the concept needed to evolve into a deeper, more authentic representation of the country’s heritage, Hernández and his team embarked on a research journey across the nation. They visited indigenous Bribri and Maleku communities, as well as rural populations in Nicoya and the Southern Zone, to study ancestral ingredients, techniques, and traditions.

We do not seek to exactly replicate the recipes of our grandmothers. We want to build the new Costa Rican cuisine from our products and our identity.
